Isn’t it the best when lunch comes together in just a few minutes? I had a bowl of lovely roasted vegetables left from last night’s dinner, including cauliflower, carrots, and those gorgeous orange sweet potatoes. With them on hand, this balsamic glazed salmon practically made itself.

The glaze could not be simpler. A quick mix of balsamic vinegar, mustard, and honey, with no exact measurements, just add what feels right, brushed over fresh salmon fillets. Once baked, it creates the most irresistible combination of rich, tangy, and slightly sweet flavours. I served the salmon with my roasted vegetables and a handful of fresh baby spinach. After snapping a photo, I even drizzled some of that balsamic glaze over the vegetables. It was too good not to share its warm, deep flavours with the whole plate.

This kind of meal is what I call a true #eatgoodfeelgood plate. It feels light, balanced, and full of colour and flavour, while still being quick enough for a weekday lunch. The salmon provides protein and omega 3 fatty acids, the roasted vegetables add fibre and antioxidants, and the glaze ties everything together with a touch of comfort.

I often wonder whether this balsamic version is my favourite way to enjoy salmon, or if the Asian inspired miso soy glaze comes out on top. Perhaps there is no need to choose, since each has its own charm and both are easy to prepare.

Balsamic Glazed Salmon

Ingredients

  • 150–180 g salmon fillet
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 tsp olive oil
  • Salt and black pepper to taste
  • 1 cup roasted vegetables of choice – cauliflower, carrots, sweet potato
  • 1 handful fresh baby spinach

Instructions

Step 1
  • Preheat oven to 200°C. Line a small baking tray with parchment paper.
Step 2
  • In a small bowl, whisk together balsamic vinegar, mustard, honey, olive oil, salt, and black pepper.
Step 3
  • Place the salmon fillet on the tray and brush generously with the glaze. Reserve a little for serving.
Step 4
  • Bake for 12–15 minutes until the salmon is cooked through and flakes easily with a fork.
Step 5
  • Serve the salmon with roasted vegetables and baby spinach. Drizzle the reserved glaze over the vegetables before serving.
