Keto Eggless Fudgy Paneer Brownies
Ingredients
- 1 tbsp flaxseed meal + 2 tbsp water
- ½ cup almond milk
- 1 tbsp melted butter
- 1 tsp vanilla extract
- 200 g paneer crumbled
- 75 g almond flour ¾ cup
- 40 g cocoa powder ½ cup
- ½ cup sugar-free baking ‘sugar’ Lakanto, Swerve
- 2 tsp instant coffee powder
- ½ tsp salt
- 1 tsp baking powder
- 2 tbsp chopped walnuts
- 60 g sugar-free chocolate chips
- ½ cup sugar-free chocolate chips for topping
Instructions
Step 1
- Preheat the oven to 180°C. Grease and line an 8×8 inch square tin with parchment paper.
Step 2
- In a small bowl, mix the flaxseed meal with water. Set aside for 2 to 3 minutes to form a flax gel.
Step 3
- Add almond milk, melted butter, vanilla extract, crumbled paneer, almond flour, cocoa powder, sugar free sweetener, instant coffee powder, salt, baking powder, and the flax gel to a blender.
Step 4
- Blend briefly until just combined. Do not over blend. The batter should be thick and smooth.
Step 5
- Transfer the batter to a bowl. Gently fold in the chopped walnuts.
Step 6
- Pour the batter into the prepared tin and spread evenly.
Step 7
- Sprinkle the chocolate chips evenly over the top.
Step 8
- Bake at 180°C for 30 to 35 minutes, until the centre is just set.
Step 9
- Remove from the oven and allow to cool completely. Slice only once fully cooled for best texture.
