A Mediterranean-Inspired Nutrient Boost

This dish is more than just comforting and flavorful. It brings together ingredients known for their health benefits, inspired by the Mediterranean way of eating.

Feta cheese provides a good source of calcium and protein while being lower in fat than many other cheeses. Marinara sauce and cherry tomatoes offer antioxidants like lycopene and vitamin C. Ingredients

  • 1 block feta (100–120 g)
  • cup marinara sauce
  • ½ cup cherry tomatoes halved
  • 1 tbsp Kalamata olives pitted and halved
  • 1 tbsp black olives sliced
  • 1 tsp olive oil plus more for drizzling
  • ¼ tsp dried oregano
  • ¼ tsp dried thyme or a small sprig fresh
  • A few fresh basil leaves (or ¼ tsp dried basil)
  • Pinch of red pepper flakes optional
  • Freshly cracked black pepper to taste
  • Seed crackers to serve

Instructions

Step 1
  • Preheat oven to 200°C (400°F).
Step 2
  • Spread the marinara sauce in the base of a small oven-safe dish or skillet. Place the feta block in the centre.
Step 3
  • Top with cherry tomatoes and scatter the olives around. Drizzle everything with olive oil.
Step 4
  • Sprinkle with oregano, thyme, basil, red pepper flakes (if using), and black pepper.
Step 5
  • Bake for 15–20 minutes, until the feta is golden and soft, and the tomatoes are blistered.
Step 6
  • Serve hot with seed crackers and garnish with fresh basil if desired.
