  • For dressing:
  • Ingredients
  • 100 g Tofu (or 75g greek yogurt)
  • Handful of coriander leaves
  • Handful of mint leaves
  • 1 clove garlic
  • juice of 1/2 lemon
  • 1 tbsp olive oil
  • ½ tsp honey
  • Pinch of black pepper powder
  • ½ tbsp water adjust as required
  • Salt to taste
  • For The Salad:
  • Ingredients
  • ½ cup cabbage shredded
  • ½ cup lettuce shredded
  • ¼ cup spring onions finely chopped
  • ¼ cup carrot julienned
  • ¼ cup bell peppers julienned (red, yellow and green)
  • ¼ cup cucumber julienned
  • ¼ cup boiled chickpeas
  • 1 tbsp coriander leaves finely chopped
  • salt to taste
  • dressing prepared above

Instructions

  • For dressing:
  • Add all the above ingredients in a food processor and blend until smooth
  • For the salad:
  • Step 1
  • Put all the ingredients in a large bowl
  • Step 2
  • Toss them all together. Serve fresh
