- Ingredients
- 100 g Tofu (or 75g greek yogurt)
- Handful of coriander leaves
- Handful of mint leaves
- 1 clove garlic
- juice of 1/2 lemon
- 1 tbsp olive oil
- ½ tsp honey
- Pinch of black pepper powder
- ½ tbsp water adjust as required
- Salt to taste
- For The Salad:
- Ingredients
- ½ cup cabbage shredded
- ½ cup lettuce shredded
- ¼ cup spring onions finely chopped
- ¼ cup carrot julienned
- ¼ cup bell peppers julienned (red, yellow and green)
- ¼ cup cucumber julienned
- ¼ cup boiled chickpeas
- 1 tbsp coriander leaves finely chopped
- salt to taste
- dressing prepared above
Instructions
- For dressing:
- Add all the above ingredients in a food processor and blend until smooth
- For the salad:
- Step 1
- Put all the ingredients in a large bowl
- Step 2
- Toss them all together. Serve fresh
